Kimetsu no Yaiba → Tororo soba とろろ蕎麦 or Yamakake soba 山かけ蕎麦
Soba (そば or 蕎麦, “buckwheat”) is a thin Japanese noodle made from buckwheat. The noodles are served either chilled with a dipping sauce, or hot in a noodle soup.
The hot noodle soup, is hot tsuyu, made of a strong mixture of dashi, sweetened soy sauce (also called “satōjōyu”) and mirin, thinner than that used as a dipping sauce for chilled soba.
Topped with tororo, the puree of yamaimo (a Japanese yam with a mucilaginous texture) and chopped long green onions.
